It depends on what has to be concealed above it. A ceiling that only levels out a soffit loses very little; one that hides ducting or a lot of services needs more. We measure and tell you the finished height before starting, because in an apartment that can matter a great deal.
Usually because the joints were filled but not properly taped, or because the framing allows slight movement. A taped joint stays intact through minor movement; a filled-only joint eventually shows a hairline. It is why the jointing stage is worth doing properly the first time.
Yes, and it is one of the main reasons people choose a flat ceiling. Tell us the lighting layout before we board, because it is far easier to plan the framing around the fittings than to cut into a boarded ceiling and find a frame member in the way.
If there is anything above the ceiling that may need reaching — a valve, a junction, a concealed cistern — then yes, and it is much better to plan it now. Cutting one in later is possible but never as neat as one formed as part of the installation.
