Sometimes, but be realistic: tile ranges change and shades vary between batches, so an exact match is not always possible. If it cannot be matched, the alternatives are taking tiles from a hidden area such as under a cabinet, or accepting a deliberate contrast.
Usually because there was a void under them. With no adhesive supporting the tile, a point load cracks it. Occasionally it is movement in the substrate or a missing expansion joint. We tap the surrounding tiles because if the voids are widespread, patching a few is only a short reprieve.
If the failures are isolated and the rest sounds solid, repair is much cheaper and makes sense. If tapping reveals hollow tiles across the area, you would be repairing repeatedly, and hacking off and retiling gives a better outcome for the money.
A small chip in a floor tile can sometimes be filled to make it less visible, but it is a cosmetic improvement rather than a proper repair. If the tile is solid and the chip is minor, that is often the sensible choice. We will tell you honestly which one your tile is.
